Causeway Beef Stew with Dumplings

Ingredients:
1 kg Causeway Prime Steak Pieces (Was £6.75 NOW £5.95)*
2 tbsp oil*
25 g butter*
2 tbsp plain flour*
2 tsp garlic*
1 large onion
2 stick of celery
3 carrots
1 large leek
1 turnip
150ml cooking red wine*
1 beef stock cube (crumbled)
2 bay leaves*
3 tbsp fresh thyme
3 tbsp chopped fresh parsley (save a little for serving)
Worcestershire sauce (to taste)*
Balsamic Vinegar (to taste)*
Salt & pepper (to taste)*

Dumplings:
125g plain flour*
1 tsp baking powder*
60g suet
Water
Salt*

Method:
1. Heat oil and butter in a heavy based frying pan or large casserole pot then fry beef until browned on all sides
2. Sprinkle with flour and cook for 2-3 mins
3. Add the garlic and all the chopped vegetables and fry for 1-2 mins
4. Stir in the crumbled stock, red wine and herbs and then add Worcestershire sauce and balsamic vinegar to taste. Season with salt and ground black pepper
5. Cover with a lid and simmer for 1 hour 30 minutes or until meat is tender
6. For the dumplings, sieve the four, baking powder and a pinch of salt into a bowl
7. Add the suet and enough warm water to form a thick dough
8. Flour hands and roll dough into small bowls
9. After stew has cooked until meat is tender, ladle into serving bowls and pop dumplings onto top
10. Pop into over (180c) for 20 mins until dumplings have risen and feel tender
11. Serve with a sprinkling of chopped parsley!
